Ragi Sev

Sev made from ragi instead of besan — thinner, with a nuttier base flavour. The spice mix is cumin, amchur, clove powder, and yellow chilli: layered rather than loud. Works the same way as regular sev in chaat, bhel, or on top of dahi, but with more character.

Also good on its own, which regular sev rarely is.
